2 Michelin-starred contemporary French restaurant Amber, helmed by Culinary Director Richard Ekkebus, has created a 8-course Christmas eve menu which includes the Duck ‘au sang’- Foie Gras & Sicilian Pistachio ‘pâté en croute” with Mango & Vanilla Chutney and the Line Caught Turbot, Confit, Salsify Tagliatelle, Fukuoka Clams and Black Winter Truffle Coulis in French classic gastronomy with an inventive twist while taking full advantage of Hong Kong’s unique crossroads between East and West.
