Daalder Amsterdam - More Than Just A Guilty Pleasure

Located on a quiet street of the trendy neighbourhood of historic Jordaan in the central of Amsterdam, this corner situated restaurant exudes charm from the outside. Dining in Daalder Amsterdam is all about the neighbourhood, local community and culture. Created out of pure imagination, Daalder Amsterdam is more than a proper dining destination that is not just only food for thought. As the flavors of a culture and fresh regional ingredients can color a holiday with unforgettable memories of a destination, the cuisine you experience is an important part of travelling – good or bad experiences included. mylifestylenews writes.


Helmed by Dennis Huwaë, right after his completion in culinary school and subsequently went to numerous culinary apprenticeships and internships in Okura’s Ciel Bleu and London’s Fat Duck, the 34 years old Huwaë returned to the Netherlands with his talent recognized by 3-Michelin star chef Moshik Roth who he battled gloriously with in the culinary field for eight years and finally set his footmark by creating a more relaxed experience and without the solemn atmosphere and rigid service often found at those haute restaurants.


Huwaë wanted his diners to dine at ease and omit the unbending stereotype hospitality which is a more low key and accessible yet with high level of quality food brought to the table. Right after he founded Restaurant Daalder, where he has been the chef and co-owner since 2016 and won numerous accredited awards including the Gault & Millau Award ‘Talented Chef of the Year 2018” and is one of the busiest and most talked about restaurants in Amsterdam and opened Edel by Dennis bistro and wine bar being his new playground where he now also spends time and ventures on a different path.


Transformed successfully from a local pub, Daalder is divided into two different dining sections, with a slight difference in interior settings. Chic mirror bar contrasting the white marble bar top adorned with art deco style glass panels lighting above the bar and dark wooden bar stools aptly aligned creates a low-key French Bistro vibe.


Unpretentiously, the understated space is styled in industrial style interior finishes with some warm elegant touches and they have taken the design approach that less is more, so there are some key accent pieces, such as stunning blown glass vases in the street windows and architectural lighting for creating the right atmosphere on the ceiling and the walls, enhanced with a golden dusted lips ornament on the wall in the other room and a modern photography art work at the end of the corner of the main dining area next to the kitchen. It has been open for three and a half years and still has the original flooring, but everything else for the interior is newly designed. Tabletops settings are simply elegant and quite striking with an eye for detail, which gives a hint of leaning towards fine dining.


Daalder is the name of the owner of the original building, but it can also be a coin from Jordaan in olden times (check out the dessert). Our host Jessica who is also the Daalder’s Restaurant Manager guided us through with the menu and wine pairing over lunch. Daalder only serves prix fixe menu, 3-4 course for lunch with an option to extend to even 7-courses to indulge yourself, depending on your appetite. Then, the rest you leave it to the chef to bring out the most anticipated dishes one after another with beautiful fresh ingredients, all carefully handpicked by Huwaë and transformed to an artful presentation to delight your palate who committed to look for the “inner beauty” on every ingredient used in order to bring out the best in each of them.


Wine pairing is essential while dining with fine gourmet dishes in a joyful and unpretentious restaurant that strives to deliver delicious and beautiful food - not to say Daalder has an eclectic and also affordable selection of rare fine European wines. We can assure you that most of the selected wines are perhaps the first time you would encounter them, yet extremely palatable and unique in character. Without much hesitation, we went with Jessica’s choice of wine pairing for her great informative introduction that already sounded ideal towards the dining sojourn. All we had to do was to be laid-back and await what’s lying ahead.


<Amuse Bouche>
The mouthful size bite of the petit and delicate cheeseburger with the bread bun made out of meringue was rich in flavour and made a perfect savoury start accompanied by the fermented, slightly alcoholic, lightly effervescent Kombucha tea drink that is known for its supposedly health benefits, served in a tailor-made mini Daalder milk crate. The imaginative presentation has already scored full marks for its visual aspect of what would to come next on menu.


<Huwaë’s Guilty Pleasure>
The next excitement followed by Huwaë’s Guilty Pleasure aka Fish and Chips, specially crafted light and airy Indonesian style potato cracker, salad of pickled cod with cornichon laying on top of Daalder’s first copy of mini newspaper with the headline of Huwaë’s Guilty Pleasure explaining such a simple food snack that could be anyone’s favorite without any doubts but to enjoy it the way it was being served. This was another whimsical presentation with memorable flavours and textures to create more anticipation for what was to follow.


<Pumpkin Crisp with Foie Gras and Sea Urchin>  
The surprise doesn’t seem to stop. The crisp made out of pumpkin and topped with foie gras and sea urchin served on a small rectangle plate with Japanese sakura painting branches out to the plate well seated by the two miniscule bite-size of the umami delicacy. Rich, fresh and complex on the palate, it was the perfect foil on such a memorable and pleasurable bite.


 <Freshly Baked Bread>
Bread is only served now (and fabulous bread at that!), which is a clever thought process, so all of the above can be savoured without saturating the palate.


<Collection of Corn>
The “set” came in three different servings and presentation - Crisp of corn with salad of salmon, avocado with calamansi sauce and a ‘dot’ of Japanese Konbu, corn pasta noodles served on a plate with salmon fins and relish, sesame and cress and smoked salmon with Greek yoghurt and ice cream made of corn, curry and wasabi sesame. A truly triumph of different combinations of flavours and textures with unexpected surprises on the tongue. Despite the noodle being a little salty, it was so delicious and the rich flavour didn’t disappoint. The Greek yoghurt that followed also created the final part of the yin and yang to this trio of bites. Jessica picked a Luxembourg Gales Auxerrois Remich Hopetsbour Grand Premier Cru 2018 white wine with herbaceous nose and a pinch of kumquat citrus palate. The clean and refreshing mouthfeel with yellow apple gives in a long lingering finish is perfect for the trio corn collection.

<Daalder’s Gnocchi>
Huwaë’s version of Gnocchi is not the usual suspect that you would have expected. Nothing come too straight forward from his very own culinary style, yet with something that reads so simply on the menu is so rich and complex on the palate. The caramelized Onion is the soul for this menu creation and well balanced with the soft washed-rind and smear-ripened French Reblochon cheese and the lightly roasted hazelnut adding a quaint texture on palate. All the ingredients are harmony in the mouth and every morsel was to die for! Paired with Italian Trediberri Langhe Nebbiolo 2018 – a classic Nebbiolo flavour with fine tannis, cherry, strawberry and vanilla excel in a smooth and elegant finish with the smooth and creamy gnocchi.



<Puffed Jasmine Rice with Black Squab & Crisp of Black Sesame Seaweed >
The arty presentation was once again visually stimulated. Breast of squab, Union 55 rum, cauliflower, puffed Jasmine rice and gravy of squab, this was the pièce de résistance of our lunch, with rich and unctuous flavours. The young and unfledged squab was superbly cooked yet not losing its delicate gamey flavour. Every ingredient was in perfect match and so many different elements and layers of flavour stood out. This was gastronomy at its best. Well paired with the medium bodied Spanish 2017 Arenisca. Fruity and intense on the nose, with rounded notes of blackberry, plum, leather and earth and well balanced, elegant on the palate with a long finished.


<“Daalder”> Dessert
Another inventive presentation on a large “old coin” with bergamont crème fraiche, champagne, vodka and coconut, it was refreshing, light and not too sweet. An ideal fitting finish to a very rich culinary journey! Jessica suggested the lush and balance German wine - Rheinhessen Huxelrebe Spätlese 2018 Erbeldinger with a sufficient body, great aromas of honey and a hint of nutmeg. Not too sweet and yet with a refreshing character. The El Maestro Sierra Jerez 1830 medium sweet sherry aged in American oak casks well rounded with the rich stroopwafel. A perfect match!



<”Stroopwafel”>
A recreation presented on a traditional Dutch Daelmans tin can, the classic parfait of caramel, ice cream and salted toffee ice cream sandwich was to be eaten with your hands, this artisanal creation was a ‘wow’ dessert and soooo delicious. You have to make room for this, no matter what. The stroopwafel chunks of wafel cookies underneath are equally delicious. An amazing end to our lunch extravaganza!


By doing things differently, Huwaë’s personal style of creation for the perfect dish still remains a quest for the ideal combination of ingredients that reinforce and complement each other perfectly. His exquisite dishes look like art, and with their many levels of flavours and textures, nothing startling but only with pleasant surprises one after another. The Italian Head Chef Luca Chemelli was manning the kitchen during our visit and without a doubt, he has spun culinary gold in the kitchen. Jessica and her assistant Joel ensured that the food was delivered with care and attention to detail, while imparting every aspect of the Chef’s creations. Despite Daalder not meeting the Michelin one star standard for its too “pub like” style concept, the already two Michelin star reigned Huwaë ‘s beautifully composed cuisine is absolutely divine and artfully executed and less than half the price you would pay in any Michelin-starred restaurants in Europe. We left on a high, as we had enjoyed some very refined cuisine that quite clearly had been created with passion and talent to spare. Service was the best of the best and the warmth of hospitality is beyond expectations. No trip to Amsterdam is replete without dining at Daalder and excellent value for money for a total dining experience to savour.

Glashütte Original Presents PanoMaticLunar In Forest Green


 Glashütte Original presents new Pano with deep green dial with the inspiration from the the tall fir trees surrounding the manufactory to capture the intense shades of green and to immortalize them on the dial of the new PanoMaticLunar. Working closely with their colleagues in the watchmaker's in-house dial manufactory in Pforzheim, they transformed the brass dial blanks into green masterpieces. Glashütte Original often takes inspiration for the colour of its dials from the natural beauty of the Ore Mountains. The dial of the new Pano model brings a rush of excitement with its deep, rich green hues recalling the coniferous forests surrounding the manufactory. The colour gradient on the hand-crafted dial is particularly eye-catching: starting from an intense dark green in the centre, the colour changes gradually to black at the edges.


The experts responsible for this impressive range of different shades work in Glashütte Original’s in-house dial manufactory in Pforzheim, Germany. After they have first given the dial a coat of galvanic nickel, the outer edge is carefully sprayed with black lacquer to produce the special dégradé effect. The entire surface is then coated with transparent green lacquer. The result of this hand-crafted, highly detailed work is a special colour gradient that renders each dial unique. The silver-coloured moon of the moon phase display is reminiscent of a shimmering lake surrounded by the fascinating green of the dial. The complex crafting of the moon disc is also undertaken in Pforzheim. As a first step, a milling tool is used to cut out two moons, giving them their wonderful convex form. Their surfaces are then polished with a diamond milling tool, which lends them a unique brilliance.


The silver of the star-studded night sky, on the other hand, is the result of an elaborate galvanic procedure. Impressive design with the Golden Ratio thanks to its unmistakable classic design, the most recent edition in the Pano Collection proves convincing at a glance: framed within a polished and satin-brushed stainless steel case, the dial, with the characteristic off-centre positioning of the displays, is an expression of the Golden Ratio, the legendary law of aesthetic harmony. The auxiliary dials for hours and minutes and for the small seconds are placed along a vertical axis within the left half of the dial, while the Panorama Date appears at 4 o‘clock. The white gold hands with Super-LumiNova inlays form a sparkling contrast to the Intense green of the dial. The sapphire crystal case back offers a clear view into the heart of the watch, the exquisitely finished Calibre 90-02 manufactory movement. Glashütte Original’s signature duplex swan-neck fine adjustment along with numerous other elements of traditional Glashütte watchmaking, such as the three-quarter plate, blued screws, screw-mounted gold chatons and the characteristic Glashütte decorative finishes, provide additional, incontrovertible evidence of their origin. The movement, with an oscillating frequency of 4 Hz, features a 42-hour power reserve. The new timepiece is equipped with a matching brown nubuck leather strap with pin buckle or foldover clasp.

H&M HOME Invites Paradise Into Your Home

H&M HOME invites paradise into the household  with the Summer 2020 Collection.


Seashell motifs and natural textiles in light, sandy shades, turquoise and deep sea blues embody a bohemian vibe, while exotic flora and fauna in warm, spicy colours mixed with rattan and jute convey laidback glamour.


Several pieces are made from sustainable materials, such as recycled polyester, organic cotton, recycled cotton and recycled glass.


“Inspired by ocean life and paradise islands during the design process, we thought about how the colours of the sea and beach findings could be really chic in the home, which lead us to emphasising shades of blue, tactility and rounded shapes throughout the collection,” says Evelina Kravaev Söderberg, Head of Design and Creative at H&M HOME.


For the summer feeling at home, use cushion covers in bright colours and ocean prints, fill plant pots with favourite greenery and lay down a jute rug.


On the dining table, try serving bowls and gold-toned dinnerware and accessories with seashell-inspired shapes, or ceramics adorned with toucans and palms.


In the bedroom, tie-dye, stripes and zig-zags create an island feel, and there are versatile beach towels and beach bags that work equally well in the city.

Edel by Dennis - Explore The Unimagined

Tucked away at the nexus of two canals in an absolute Dutch neighbourhood and minutes away from the Museumplein, this off the beaten tourist track restaurant dining is something that you will be ashamed to miss out whilst you’re visiting Amsterdam. mylifestylenews writes.


What cuisine would you expect in Amsterdam we asked ourselves especially when the trendy city went through the gastronomic revolution with new implementations over the past decades? The Dutch may not have been exactly at the forefront of cutting edge cuisine before but being one of the gastronomic melting pots in Europe thanks to its dynamic immigrants who brought in their individual unique culture blending with excitement of diverse ingredients being introduced and exploited, the time has changed now and so it was that we approached Edel by Dennis with some curious expectations and getting ready to explore the unimagined. We decided to walk from our hotel next to the Vondelpark and around the Museumkwartier to Edel by Dennis, as everything is flat and a pleasant 20-30 minute walk while exploring the real Dutch suburban neighbourhood with the navigation of Google maps to track our progress. When we arrived at an old stand out red brick building, we happened to see the sign, which was not exactly obvious, but presumably the locals know this place quite well, as it has been there for some decades. The building faces a canal and while the weather wasn’t cold and windy, you could see its potential for summer outdoor events and activities.

On entering, you have a small bar on the left adorned with catchy wordings written on the red walls that gives a little sassiness to the entire ambience especially when you arrive after dark. This lounge bar setup is decorated with low sofas and stools adjacent to a large doorway and opening to your right which leads into the restaurant proper. Inside was a cavernous space with the entry and one wall of small windows, top to bottom, facing the canal.



Graffiti artist Elle Streetart’s giant visage modern pop spray painted artwork can’t be missed upon entering the vast industrial like dining area. The striking visual is vivid and provides a burst of colour in an otherwise black and dark brown dining room and it is all very chic. It expresses a strong character to the entire style of the theme, reflecting the culinary style to be expected of Huwaë’s cooking for its quirky motif together with chic furniture designed with a nod to retro Danish in wood and leather as well as banquette seating along the wall under the pop artwork. It is vigorously aesthetic!



Retro cum industrial architecture lighting fixtures are hung around the very high ceiling of this old red brick factory’s transformation which used to house students of gem making and is another highlight throughout from its legacy. There is a raised dining section by the windows looking out at the canal which gives a little more depth and interest to the whole dining room. A floor to ceiling wine rack is another eye-catching drawcard at the other end of the dining room behind the main dispensing counter bar, covering the entrance to the kitchen.




While Edel is translated as gem or noble in Dutch, so is the décor and Huwaë’s culinary creation – a true gem. Our host Rosemary made us feel right at home the moment she came to our table. Her sense of humour and immense product knowledge of food and beverage appealed to us. We had an option of a Menu Innovative (3-6 course prix fixe tasting menu) or a-la-carte and we let Rosemary know that we wanted to taste a good cross section of the menu, so a-la-carte seemed best and we were off and away, along with wine pairings which, as it turned out, Rosemary had an unerring sense about and paired the perfect and unknown grapes with our food. She prepped us by telling us we were to expect classic cuisine with a nod to the French, but every dish has a wink to Asian cuisine and sometimes even to South America.


Anticipation was killing us and our dining sojourn at Edel by Denis began with an Amuse Bouche – A bao with dill cream, marinated salmon and a dash of ponzu. This mouth full bite size airy Asian conversion bao gave us some cause for anticipation about what was to follow, as it was delicious.



<Norway Lobster>
The lobster was slightly pan-grilled with a crunch of tempura texture. The beautiful flavours transpired along with a stunning presentation. Every bite is clean and fresh and you taste the sea enhanced by the natural sweetness from the carrot and coconut, plus the citrus palate of the Philippine Kalamansi was a master touch. Perfectly paired with the 2018 Knebel Riesling that offers an attractive nose made of lemongrass, yellow plum, earthy spices, fine creamy elements with a hint of licorice and smoke. Smooth yet playful and with a surprisingly intense palate that leaves a juicy and creamy feel of ripe fruits, minty elements and licorice in the herbal and delicately intense finish.


<Steak Tartare>
Steak Tartare with cream of watercress, shitake, soya and parmesan cheese topped with a dash of nori as garnish. This was definitely a different take on Steak Tartare and we loved it! It also had a nice peppery kick on the palate. It was difficult to detect the flavor of soy, which we were expecting to stand out more, but a well-executed dish that we would want to order on the next visit.


<Dorade Thai Style>
Dorade is a sweet water white fish and this was a superb rendition of how fish should be cooked and what skill has been shown in every facet of this dish, it was perfectly grilled. The side salad chili Som Tum is without any compromise from its original Thai version and gave the right kick of heat and yet the refined julienned papaya was well tossed and most importantly not watery, topped with a thinly sliced crispy coriander chip. Even the accompanying fried rice is another accomplishment for this set combination, every mouthful was so enjoyable. With such mastery of Asian ingredients and taste – some Asian chefs shall have learnt a lesson from this exotic and authenticity in flavours that creates harmony with complex ingredients. A must order! Paired with the fruity 2018 Vieilles Vignes Mâcon-Péronne of its pear, apple, mineral and a hint of grass, this medium white wine was a perfect match with the fish and a palate cleanser to the salad.


<Beef From The BBQ>
This Angus flat iron steak was aged for 280 days and was absolutely sensational. The ageing definitely pays dividends, but it is all about how the chef and his culinary team have cooked the beef. Glazed with black garlic and topped with golden roasted sesame seed with a side of minuscule potato fondant which is simply divine. Paired with 2017 J.J. Adeneuer red wine with dark currants, cherries on palate, another beautiful medium body and smooth wine for the beef. We had two orders of side dishes to go with our main courses: French Fries with Onion Compote, Aioli and Parmesan Cheese and a Seasonal Salad with Jerusalem Artichokes and all were hearty and delicious.


With the amount of food we sampled, unfortunately we did not leave any room for desserts, but we were sorely tempted. For now it is a small menu which allows the kitchen to deliver consistency and surprises with every dish. Every item from the circumspect crafted menu has been given the same love and attention to detail, no matter how big or small. You can’t devour but to enjoy every morsel mindfully to pay respect to this master creation. Despite there was a leaning towards more seafood than other options, this is the Dutch preference and we were still spoilt for choice and not to mention that the portion sizes are quite generous. The restaurant exudes humour in a number of ways for you to explore and the front of house team are a key part of this enjoyment! It is also great to see the local patronage and is a breath of fresh air to have the luxury of space, feel unhurried in your eating and the service takes time to engage you – Rosemary is a another gem –  a total “edel” which makes Edel by Dennis an absolute winner.
